Ingredients

  • 500g Tipo 00 flour
  • 300ml cold water
  • 10g salt
  • 1g fresh yeast
  • 200g tomato sauce
  • 250g mozzarella (preferably Fior di Latte)
  • Fresh basil leaves
  • A drizzle of olive oil

Preparation

  1. Prepare the dough: Knead the flour, water, salt, and yeast into a smooth dough. Let the dough rest in the refrigerator for at least 24 hours.
  2. Shape the dough: Divide the dough into portions and shape them into balls. Each ball should weigh about 200-250g.
  3. Top the pizza: Roll out the dough and spread tomato sauce over it. Add mozzarella and basil leaves, then drizzle with olive oil.
  4. Bake: Bake the pizza at the highest temperature (ideally 430-480°C) until the crust is golden and crispy. This should take about 60-90 seconds.
